    If this kind of thinking is good enough for Edison, it’s good enough for us. We’ll try anything 10,000 times.

    If we’re not pushing the limits of our creativity on the test stills in our laboratory, our spirits aren’t going to be any different or better than stuff that’s already out there. So we distill things that might not have any business being distilled.

    Oysters? Check.
    Dungeness crab? Check.
    Kombu seaweed? Check.
    Our own Christmas tree? Yup.

    Some of our strange experiments might not ever make it into bottle, but working with unusual ingredients is all about learning the limits of our craft—and we have a helluva fun time doing it.

    And if we can get one lightbulb in 10,000? We’ll drink to that.
