Recipe: St. George take on a Donn Beach classic

Ponga Punch

3/4 oz St. George Spiced Pear Liqueur

1 3/4 oz aged agricole rhum

1/2 oz fresh lime juice

1/2 oz simple syrup

Among bartenders, Donn the Beachcomber is known as much for the custom ingredients in his recipes as he is for their groundbreaking impact on the drinking world. Don’s Mix, a proprietary blend of white grapefruit juice and cinnamon syrup, was a key component of the Zombie, but it features more prominently in the Donga Punch, which has just three ingredients to the Zombie’s nine. St. George Spiced Pear Liqueur is a great substitute for Don’s mix in Tiki drinks. Using pear instead of grapefruit creates a more approachable cocktail in recipes that are already heavy on citrus. And with its whole clove and cinnamon, St. George Spiced Pear Liqueur adds the perfect amount of spice. The Ponga Punch is our homage to Don’s eponymous 1937 classic. We love this with St. George California Reserve Agricole if you’re lucky enough to find some. To make it, add ingredients to a tin, fill 3/4 full with ice and shake for seven seconds. Strain into a rocks glass over crushed ice, then garnish with a cinnamon stick and a grapefruit slice.
