Pomodoro Highball

2 oz tomato powder-infused Aqua Perfecta Basil Eau de Vie

3/4 oz 1:1 simple syrup

3/4 oz fresh lemon juice

Combine all ingredients in a cocktail shaker filled with ice and shake to combine. Strain into a highball glass filled with ice, and garnish with a miniature mozzarella ball on a cocktail pick, with a basil leaf and a small pinch of flaky salt.

To make the infused Eau de Vie, blend 1 tbsp. of tomato powder with 250 ml of Aqua Perfecta Basil Eau de Vie for 60 seconds, then store in an airtight container. Shake before use, but do not strain.
