Pear Daiquiri

2 oz St. George Pear Brandy

3/4 oz fresh lime juice (keep the lime halves for shaking)

3/4 oz simple syrup

1 bar spoon unaged agricole rum

Add pear brandy, simple syrup, lime juice, and cut limes halves to a shaker filled with ice. Shake vigorously for 15–20 seconds. Strain into a chilled coupe. Float a bar spoon of agricole rum on top of the cocktail and serve.
