Valley Gin-Gin Mule

1 3/4 oz St. George Valley Gin

1 oz 1:1 simple syrup

3/4 oz fresh lime juice

2-3 sprigs of fresh mint

2 dashes orange bitters

2 oz ginger beer

Combine the mint, lime, and simple syrup into a cocktail shaker. Muddle well. Add orange bitters and gin. Add ice and vigorously shake. Double-strain into a highball glass over fresh cubed ice. Top with ginger beer. Garnish with a lime wheel, mint sprig, and optional orange peel.
