Valley G & Tea Sour

1 1/2 oz St. George Valley Gin

1/2 oz green tea syrup

1/2 oz fresh lemon juice

2 dashes orange flower water

1 egg white

Combine all ingredients into a cocktail shaker, then dry shake until nice and frothy. Add ice and shake again to chill. Double-strain into a chilled coupe glass. Garnish with an orange peel.

Green tea syrup:
8 oz green tea cold brew
8 oz white cane sugar

To make a green tea cold brew, add one tablespoon of green tea leaves to 16 oz of filtered water at room temperature. Let steep for 6 hours in the fridge. Fine-strain the liquid into a new container.

To make green tea syrup, combine the green tea cold brew and sugar in a saucepan and simmer over medium heat. Maintain a gentle simmer and occasionally stir for 10 minutes. The sugar should be completely dissolved. Remove from heat and let it cool to room temperature. Fine-strain it into an airtight container and store it in the refrigerator. (Good for about 3-4 weeks.)
