1 1/2 oz St. George Valley Gin

1 1/4 oz umeshu

3/4 oz apricot syrup

3/4 oz lime juice

3 drops saline

sparkling sake

Add all ingredients except sparkling sake to a tin with ice and shake well. Strain into a wine glass over ice, then top with sparkling sake and garnish with apricot powder and a lime swath.
