Botanivore Gin & Tonic

2 oz St. George Botanivore Gin

4 oz quality tonic water

Fill a chilled highball glass with ice, add gin, top with tonic water, then add a squeeze of fresh lime. Add a lime cheek to the glass, then stir gently to combine.
