Distilling is our form of self-expression, and St. George Raspberry Brandy exemplifies our commitment to transforming exceptional fruit into brandies that showcase a real sense of place.
We manage to fit almost 40 pounds of perfectly ripe Meeker raspberries into a single bottle of our Raspberry Brandy. Why Meeker? The variety has extraordinary aromatics which dazzle the nose once they have been distilled down to their essence. We are so particular about our raspberries that if we can’t find fruit that meets our exacting standards, we won’t distill Raspberry Brandy that year. For more on that, please read here.
Just as we do with our pear brandy, we begin by sourcing the most flavorful and characteristic raspberries we can find and then distill them at their prime. We use the whole fruit in its entirety in a deliberate effort to maximize the most elemental flavors and aromas. Raspberries are the only ingredient in our Raspberry Brandy, so all you get is the honest essence of the raw material. While our stills (custom-made for us by the Arnold Holstein Company) demand expertise and keen judgment, they give us extraordinary command over each distillation run, allowing us to capture all the nuance and depth of this incredible fruit with just a single still run.
While the word terroir is typically associated with wine, it certainly applies to St. George Raspberry Brandy. The fermentation and distillation techniques we have developed over the past four decades allow us to showcase the characteristics of the land where these peerless berries were grown. On the nose, you’ll find salinity alongside bright fruit. The palate leads with bracing berry notes balanced with sea kelp and fresh cut grass. The finish is fresh and earthy.
Europeans traditionally sip unaged fruit brandy as a digestif, and we love enjoying Raspberry Brandy after a great meal. With its bold and hard-to-find aromatics, Raspberry Brandy is also great for creating cocktails your friends and guests won’t soon forget.
