Twin Peaks

1 3/4 oz St. George Terroir Gin

1/4 oz Green Chartreuse

3/4-1 oz simple syrup (to taste)

3/4 oz fresh lime juice

Shake all ingredients with ice to chill, then double strain over one large ice cube. Garnish with fresh sage.
