The Bear Trap

1 1/2 oz St. George Botanivore Gin

1/2 oz St. George Spiced Pear Liqueur

1/2 oz pure cranberry juice

1/2 oz simple syrup

1 egg white

3 dashes Peychaud’s bitters

With its roseate hue and courtship-inspired gin, this is a cocktail for love. Master distiller Lance Winters created Botanivore for his wife Ellie, who loves the juniper’d spirit. He jokes that he made the gin to snag her, and as her maiden name is Behrstock, he included a bear trap on the label to land the punchline. The recipe is a gussied up gin sour. Cranberry provides the tart, as well as the color. (You’ll want to make sure you’re using 100% juice and not a watered down “cranberry cocktail.”) Our Spiced Pear Liqueur deepens the fruit in the drink while adding warm baking spice, making it taste extra special. Egg white lends a luscious texture. To mix, add everything but the bitters to cocktail tins (no ice) and dry shake for ten seconds, breaking up and incorporating the egg white. Now separate the tins, fill the larger one 3/4 full of ice and shake again to chill. Strain into a coupe, then add three careful dots of the Peychaud’s to the foam. Pull a cocktail pick through the dots to transform them into hearts.
